Hon-Warikomi is a traditional Japanese forging method where a high-carbon steel core is inserted into a split soft-iron body and forge-welded by hand.
Funayuki is an all-purpose knife with a thin blade optimized for cutting fish.
Mostly double-edged knives, but single-edged knives are also available, with blade lengths ranging from 12 to 21 cm.
Funayuki means "fisherman's row." Initially, this type of knife was used by fishers on boats to make fisherman's rice, a dish in which the fish is processed, mixed with several kinds of vegetables, mixed in a pot, and boiled.
