Funayuki is an all-purpose knife with a thin blade optimized for cutting fish.
Mostly double-edged knives, but single-edged knives are also available, with blade lengths ranging from 12 to 21 cm. At Yoshimune Knives, we have our original blackened knife called the Iyo-Type Funayuki. This knife has a larger blade area and a wider blade, making it easier to cut large vegetables.
Funayuki means "fisherman's row." Initially, this type of knife was used by fishers on boats to make fisherman's rice, a dish in which the fish is processed, mixed with several kinds of vegetables, mixed in a pot, and boiled.* This is handmade product, so there may be slight difference from the actual image.
* Please note that for our Blue#1 High carbon steel, the tip is reduced intentionally to avoid from chipping during the transportation.
