About Damascus Knives
Damascus knives are popular among enthusiasts because of their artistic patterns, which give them a stylish and luxurious appearance. For example, the 69-layer Damascus has a structure in which the core material is sandwiched between 34 layers of laminated steel on each side (34 + 1 + 34 = 69).
It is said to have originally started as a way for blacksmiths to make more robust knives by layering soft-iron plates on both sides to reinforce them.
When sharpened or polished, the pattern changes. Eventually, your knife will be completely unique. Yoshimune Knives also offers forged Damascus knives made of steel (Kurouchi) and polished (Suminagashi).
Steel
Carbon steel is mainly Aogami (Blue) steel #2, which has the best overall balance of performance. Specifically, Aogami (Blue) steel #2 has the following features:
- Contains chromium and is resistant to rust.
- Has high hardness (HRC60) and good sharpness.
- Has a tough blade and is resistant to spills.
- Not as hard as Aogami Super (HRC64) or #1 (HRC62) and is relatively easy to sharpen.
Shirogami (White) steel is pure carbon steel that is reasonably priced but rusts easily.
