Sharpening stones
All our whetstones are made in Japan. Whetstones are categorized by roughness (granularity), with such being coarse grit, medium grit, and fine grit. Coarse grit whetstones are used for repairing chipped blades while finishing whetstones are for daily maintenance. Medium grit whetstones are for regular sharpening and blade adjustment. Roughness is determined by granularity (number of grains per cm square) and is indicated by grit number (1000 grit). Rough grindstones have larger grains and smaller grit counts (e.g. 240 grit) while fine grit whetstones have smaller grains and larger grit counts (e.g. 8000 grit).
