Anglers initially used these all-purpose knives to make cook fish and vegetables onboard their boats. Their design incorporates aspects of Usuba and Sashimi knives. It's versatile like the Santoku but has a sharper tip, perfect for delicate work. Its double-bevel blade works for both right and left-handed people.
Blue (Aogami) #1 (Hitachi Metals Ltd.) is very similar to Blue Steel #2, but the additional Carbon and Tungsten / Wolfram result in even better edge retention and toughness. The steel is perhaps most commonly seen in high-grade Japanese traditional knives.
